Ingredients

  • 1 package arugula
  • 1 lb chicken breast, cooked
  • 1/4 cup fresh mint
  • 1 cup quinoa, cooked
  • 4 beets, cooked
  • 1 cup pomegranate seeds
  • 1/2 red onion, chopped

Dressing

  • 1/4 cup extra virgin olive oil
  • 1/4 lemon, juiced
  • 2 tbsp honey
  • 1 clove garlic
