Chicken Bacon Ranch Quesadillas

Equipment

  • 1 pan
  • 1 knife

Ingredients

  • 1 lb chicken shredded (use rotisserie for short cut)
  • ¾ cup bacon bits
  • 1 jalapeno
  • 1 ½ cups shredded cheese
  • ½ cup cream cheese or creamy vegan cheese
  • 10 tortillas
  • Chives for topping
  • Avocado oil
  • 12 oz ranch

Instructions

  • Gather your ingredients.
  • Cook bacon according to package instructions.
  • Chop vegetables and crumble bacon.
  • Combine chicken, bacon, jalapeno, cheese, 1 cup ranch and cream cheese in a bowl. Spread onto a tortilla and add another tortilla on top.
  • Place tortilla in a greased pan and cook over medium heat until both sides are crispy (about 5 min per side).
  • Cut into triangles, drizzle with additional ranch and chives and enjoy!
