Chicken Salad
- 1 rotisserie chicken
- 1/2 mango
- 1/2 red onion
- 1 carrot
- 1 tbsp green onions or chives
- 1 cucumber
Dressing
- 1/4 cup olive oil
- 1/2 lemon, juiced
- 1/4 cup coconut milk
- 1 tbsp almond butter
- 1 tsp ginger
- 1 clove garlic
- 3 tbsp coconut aminos
