Chicken Salad

  • 1 rotisserie chicken
  • 1/2 mango
  • 1/2 red onion
  • 1 carrot
  • 1 tbsp green onions or chives
  • 1 cucumber

Dressing

  • 1/4 cup olive oil
  • 1/2 lemon, juiced
  • 1/4 cup coconut milk
  • 1 tbsp almond butter
  • 1 tsp ginger
  • 1 clove garlic
  • 3 tbsp coconut aminos

Instructions

  • Gather your ingredients.
  • Make the dressing by combining all ingredients in a blender until smooth.
  • Chop the vegetables and fruit and grate the carrots into shreds.
  • Shred the chicken.
  • Combine all ingredients in a bowl and pour the dressing over it. Mix and enjoy!
