Easy Sweet Potato Rounds

Equipment

  • 1 knife
  • 1 cutting board
  • 1 baking sheet

Ingredients

  • 2 sweet potatoes
  • 1 tbsp avocado oil
  • 1 cup pomegranate seeds
  • 1 block feta (dairy free if needed)
  • 1/3 cup honey
  • dash salt

Instructions

  • Gather your ingredients and preheat your oven to 400°F.
  • Slice sweet potatoes into rounds.
  • Place on a greased baking sheet and drizzle with oil and salt. Bake for 30-40 minutes, flipping halfway through.
  • Top with feta, pomegranate seeds and drizzle with honey. Serve and enjoy!
