Gluten Free Apple Fritters

These gluten free apple fritters are the most perfect fall treat! They are lightly pan-fried and drizzled with an easy 3-ingredient date icing. These fritters come together in under 30 minutes!

Ingredients

  • 1 cup gluten-free flour
  • 1 tsp baking powder
  • Dash salt
  • 1 tsp cinnamon or cardamom
  • 1/4 cup coconut sugar
  • 2 tbsp milk (feel free to use dairy-free milk here)
  • 1 tsp vanilla extract
  • 1 honeycrisp apple (or apple of your choice), chopped
  • 1 egg or 1/3 cup applesauce
  • avocado oil

Icing

  • 1/4 cup milk (feel free to use dairy-free milk here)
  • 4 dates
  • 1 tsp vanilla extract

Instructions

  • Add flour, baking powder, salt, cinnamon and coconut sugar to a bowl.
  • Add in milk, vanilla and egg or applesauce and fold in apples.
  • Form batter into small fritters and place in pan generously coated with oil.
  • Cook over medium heat for 3-4 minutes per side, or until crispy on the outside.
  • While the fritters are cooking, make the icing by combining dates, vanilla and milk in a blender.
  • Drizzle icing over apple fritters and enjoy!

Notes

Make sure you have plenty of oil in the pan and heat up the pan first! Making the fritters smaller can also make them easier to flip and handle.
Chop the apples into small 1/4 inch pieces. Soak up some of their moisture with a paper towel.
My favorite gluten free flour to use for this is Bob's Red Mill Paleo Flour.
