Gluten Free French Onion Soup

- 1 tbsp avocado oil
- 3 sweet onions
- 1 lb chicken breast
- 2 cartons chicken stock
- 3 bay leaves
- 1 tsp thyme
- 1/2 cup coconut aminos
- gluten free croutons
- dairy free cheese (optional)
Gather your ingredients.
Chop your onions.
Set instant pot to "sauté" and cook onions until browned.
Add broth, chicken, bay leaves, thyme and coconut aminos to the instant pot. Cook for 15-20 minutes and select "pressure release".
Shred chicken. Serve with croutons and optional cheese and enjoy!
