Heart Thumbprint Cookies
These Heart Thumbprint Cookies are filled with bright red jam and are perfect for Valentine's Day. They're gluten free and dairy free, but taste like classic shortbread. These cookies are melt-in-your-mouth soft, with buttery shortbread and a fruity well of fresh jam. They're also refined sugar-free and made with more wholesome ingredients than your typical store-bought cookies.

- 4 cups gluten free flour
- dash salt
- 1 tsp baking soda
- 1/2 cup milk
- 6 tbsp honey
- 2 tsp vanilla
- 1/2 cup olive oil
Chia Jam
- 2 cups frozen strawberries
- 4 tsp water
- 2 tbsp honey
- 2 tbsp chia seeds
Preheat the oven to 350°F. Gather your ingredients.
Combine dry ingredients in a bowl and stir in wet.
Place the dough in the refrigerator to chill for 10-15 minutes.
While the dough is chilling, make the chia jam. Start by combining water, berries and honey in a pot over low to medium heat. Cook until fruit begins to break down or about 5-7 minutes. Remove from heat and stir in chia seeds.
Form the dough into balls, place on baking sheet, lightly flatten and press your finger gently into each cookie twice to make a heart shape.
Fill each hole with jam and bake for 12-15 minutes, or until golden brown.
