I know I’ll always have a satisfying lunch or dinner with this recipe and all it takes is a few wholesome, straightforward ingredients. I’m all about jumping on trends, but I love adding my own allergy-friendly twist to make them work for me!

Equipment

  • 1 cutting board
  • 1 knife
  • 1 pan
  • 1 baking sheet

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 large sweet potato
  • ½ cup dairy free ricotta cheese
  • ½ avocado
  • 1 tbsp honey

Instructions

  • Gather your ingredients and preheat oven to 400°F.
  • Slice sweet potato into rounds and place on baking sheet. Add oil and taco spices and bake for 30 minutes, or until browned.
  • While sweet potatoes are baking, cook ground beef and taco spices in a pan over medium heat until browned.
  • Add sweet potatoes, ground beef, ricotta cheese and avocado to bowls and drizzle with honey. Enjoy!
