- 1 large sweet potato
- 1 can black beans
- 1 lb ground beef
- 1 package taco seasoning
- 1 cup mixed peppers
- ½ red onion
- 1 jalapeno
- 1 avocado
- 1 tsp garlic powder
- Dash salt
- Avocado oil
Gather your ingredients.
Cut sweet potatoes into rounds. Add to air fryer, drizzle with oil, salt and garlic powder and cook for 15 minutes or until potatoes are soft.
While the sweet potatoes are cooking, add ground beef to an oiled pan. Cook for 5 minutes.
Pour in taco seasoning, peppers and drained and rinsed beans. Cook until beef is to desired doneness.
Pour mixture over sweet potatoes are cook for another 10 minutes.
While that is cooking, chop your jalapeno, avocado and red onion.
Top with mashed avocado, jalapeno and red onion and enjoy!
