    Equipment Needed

For these Loaded Sweet Potato Nachos, I used my air fryer, of course, as well as a cutting board and knife, plus a pan.

    Ingredients Needed

Sweet potato: You'll need to roast this until golden and crisp at the edges. This is what will add natural sweetness that goes perfectly with the savory toppings.

Black beans: These are a great source of plant-based protein, fiber and creaminess.

Ground beef: I like to make sure I brown my ground beef really well.

Taco seasoning: A simple way to deeply flavor the beef. Use a pre-made packet or your own homemade mix.

Mixed peppers: These add crunch and sweetness to these Loaded Sweet Potato Nachos. Plus, they just look amazing. Dice them small so they cook quickly.

Red onion: You can use any onion. I just love the mild flavor of red onion.

Jalapeno: Go ahead and remove the seeds for milder heat if you need to or leave them in for more heat.

Avocado: Totally classic for sweet potato nachos, of course.

Garlic powder: Brings out the beef and I love that it doesn't burn as easily as fresh garlic.

    Step By Step Instructions

Step 1: Gather the ingredients for your Loaded Sweet Potato Nachos.

Step 2: Slice sweet potatoes into rounds, toss them with oil, salt and garlic powder. Next, air fry for 15 minutes until tender and delicious.

Step 3: While they cook, brown the ground beef in an oiled pan for 5 minutes.

Step 4: Add the taco seasoning, mixed peppers and drained black beans. Cook everything until beef is fully done.

Step 5: Layer the beef mixture over the sweet potatoes and cook the sweet potato nachos for 10 more minutes. Meanwhile, chop jalapeno, red onion, and avocado.

Step 6: Top the Loaded Sweet Potato Nachos with mashed avocado, jalapeno and red onion. Serve and enjoy!

    Storage

Store any leftover Loaded Sweet Potato Nachos in an airtight container in the fridge for up to 3 days. For best results, reheat in the air fryer or oven to crisp up the sweet potatoes again.

If you've already added avocado, remove it before reheating and add fresh toppings after warming.

    Variations

Vegetarian option: Skip the ground beef and double the black beans or add lentils.

Extra cheesy: Sprinkle shredded cheddar or Mexican blend cheese over the top before the final cook for a gooey finish on your Loaded Sweet Potato Nachos.

Chicken swap: Use shredded rotisserie chicken with taco seasoning instead of ground beef for a quicker option.

Spice control: Swap jalapeno for mild green chilies or crushed red pepper if you prefer less heat in your sweet potato nachos.

Toppings galore: Add sour cream, salsa, fresh cilantro, lime juice or pickled onions for extra flavor and flair.

    How To Serve

Here's what to do with your Air Fryer Loaded Sweet Potato Nachos:

    • These are great loaded with avocado and dairy free cheese sauce.
    • Drizzle over a little sour cream and fresh, chopped cilantro.
    • Serve with a glass of chilled water and Fruit Ice Cubes!
    • These are great served for dinner or a snack!

    Recipe FAQ

    Are sweet potato nachos good?

Yes! Sweet potato nachos are a delicious, wholesome version of regular nachos. The sweetness from the potatoes goes really well with savory toppings like seasoned beef, black beans and creamy avocado.

What toppings go well with sweet potatoes?

Great toppings include black beans, ground beef, shredded chicken, avocado, jalapenos, red onion, salsa, cheese, sour cream, cilantro or a squeeze of lime.

    Is this recipe gluten free?

Yes, this recipe is naturally gluten free, as long as you check that your taco seasoning and any store-bought toppings (like salsa or sour cream) are certified gluten-free.

Can I make this recipe with regular potatoes?

Absolutely! Regular potatoes will work just as well. Russets or Yukon Golds are great options. Just keep in mind that the flavor will be more neutral compared to sweet potatoes.

Can I make this recipe dairy free?

Yes. You'll need to skip the cheese or use your favorite plant based cheese. Avocado adds a creamy texture, so you won't miss the dairy.

How can you make the sweet potatoes really crispy?

To get them crispy, slice the sweet potatoes thinly and evenly, avoid overcrowding the air fryer, and cook them in a single layer. You can also pat them dry before cooking and finish with a few extra minutes of air frying.
