Apple Crisp Bars

These fall-inspired Apple Crisp Bars perfectly capture the flavors of the season!

Ingredients

  • 1 1/4 cups oat flour
  • 1/3 cup butter (I use dairy free butter)
  • 1/4 + 1/3 cup sugar
  • 1 package cream cheese (I use dairy free cream cheese because I am dairy free)
  • 1 tsp vanilla
  • 2 tbsp honey
  • 2 small apples (I use Honeycrisp), finely chopped
  • 1 tbsp apple pie spice
  • 3/4 cup rolled oats
  • 1/4 cup oil
  • 1 jar caramel (or homemade)

Instructions

  • Preheat oven to 350 ºF
  • Combine the flour, butter and 1/4 cup sugar in a bowl. This will be the crust layer.
  • Press this mixture into a greased 8x8 baking dish and bake for 10-12 minutes, or until browned.
  • While the crust is baking, mix together the cream cheese. vanilla and liquid sweetener in a bowl. This will be the filling.
  • Wait for the crust to cool and then pour the filling over the crust. Spread until it forms an even layer.
  • Mix the apples, 1/3 cup sugar, apple pice spice, rolled oats and oil in a bowl. This will be the crumble layer.
  • Pour the crumble over the filling and bake for 45 minutes.
