Apple Samoas

It's Girl Scout season and these Apple Samoas are the perfect twist on the classic cookie! It's a great option for those of us with multiple dietary restrictions! I was a Girl Scout when I was younger, so this flavor combination is so nostalgic to me. When I was little, samoas were my absolute favorite cookie (and my dad's favorite too)! I just love the combination of chewy caramel, rich chocolate and toasted coconut.

Equipment

  • 1 knife
  • 1 cutting board
  • 1 blender
  • measuring cups and spoons
  • 1 baking sheet
  • 1 knife
  • 1 bowl
  • 1 spoon

Ingredients

  • 2 apples
  • 1/2 cup coconut flakes
  • 1/2 cup chocolate chips

Date Caramel

  • 7 dates
  • 1 tsp vanilla extract
  • 1/4 cup pecan butter
  • 1/3 cup dairy free milk
  • 1 tsp cinnamon

Instructions

  • Gather your ingredients.
  • Combine ingredients to make homemade caramel in a blender.
  • Slice apples into thin rounds.
  • Press measuring spoon into the center to cut a hole in the middle of each round.
  • Place coconut flakes on a baking sheet. Toast for 5 minutes at 350°F.
  • Spread caramel over each apple slice.
  • Sprinkle coconut flakes on top of the caramel.
  • Melt chocolate and drizzle on top! Refrigerate until firm and enjoy!
