Apple Samoas
It's Girl Scout season and these Apple Samoas are the perfect twist on the classic cookie! It's a great option for those of us with multiple dietary restrictions! I was a Girl Scout when I was younger, so this flavor combination is so nostalgic to me. When I was little, samoas were my absolute favorite cookie (and my dad's favorite too)! I just love the combination of chewy caramel, rich chocolate and toasted coconut.

- 2 apples
- 1/2 cup coconut flakes
- 1/2 cup chocolate chips
Date Caramel
- 7 dates
- 1 tsp vanilla extract
- 1/4 cup pecan butter
- 1/3 cup dairy free milk
- 1 tsp cinnamon
Get Recipe Ingredients
Gather your ingredients.
Combine ingredients to make homemade caramel in a blender.
Slice apples into thin rounds.
Press measuring spoon into the center to cut a hole in the middle of each round.
Place coconut flakes on a baking sheet. Toast for 5 minutes at 350°F.
Spread caramel over each apple slice.
Sprinkle coconut flakes on top of the caramel.
Melt chocolate and drizzle on top! Refrigerate until firm and enjoy!
