    It's Girl Scout season and these Apple Samoas are the perfect twist on the classic cookie! It's a great option for those of us with multiple dietary restrictions! I was a Girl Scout when I was younger, so this flavor combination is so nostalgic to me. When I was little, samoas were my absolute favorite cookie (and my dad's favorite too)! I just love the combination of chewy caramel, rich chocolate and toasted coconut. Unfortunately, I am no longer able to eat them because of my food allergies (I need to create an allergy-friendly version ASAP). These apple samoas are the perfect wholesome version of this flavor combination!

    This easy recipe takes all the delicious flavors of that iconic sweet treat and transforms them into a simple, kid-friendly snack or dessert. We're keeping it gluten free, dairy-free and refined sugar free! Plus, it uses minimal ingredients and comes together so quickly! If you're like me and apple and nut butter is one of your favorite snacks, then you'll absolutely adore this twist on the classic. Plus, I made my own thick date caramel sauce- a twist on my favorite dairy free caramel recipe!     Equipment Needed

    To make these Apple Samoas you will need a knife for cutting the apple, blender, cutting board, measuring cups and spoons, baking sheet, knife for spreading the caramel sauce, bowl and spoon.

    Ingredients Needed

    Apples: I love using honey crisp apples for this recipe! You can use any kind of apple you love.

    Homemade Caramel: I created a twist on my favorite dairy free caramel recipe to make it thicker! It is also refined sugar free.

    Coconut Flakes: Toasted coconut flakes add a delicious flavor to these apple samoas.

    Chocolate: I drizzled melted dairy free chocolate on top of these apple samoas! You can use any kind of chocolate you love.

    Step By Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Combine ingredients to make homemade caramel in a blender.

    Step 3: Slice apples into thin rounds.

    Step 4: Press measuring spoon into the center to cut a hole in the middle of each round.

    Step 5: Place coconut flakes on a baking sheet. Toast for 5 minutes at 350°F.

    Step 6: Spread caramel over each apple slice.

    Step 7: Sprinkle coconut flakes on top of the caramel.

    Step 8: Melt chocolate and drizzle on top! Refrigerate until firm and enjoy!

    Storage

    Store these apple samoas in the refrigerator in an airtight container for 3-4 days. You can also freeze them!

    Variations

    Apples: I used honey crisp apples in this recipe, but feel free to use Granny Smith, Gala or another variety! You can also try this recipe out with bananas, pears or another fruit.

    Caramel: I used homemade date caramel in this recipe, but feel free to use store-bought caramel to make this recipe quicker!

    Toppings: I topped these apple samoas with caramel, toasted coconut flakes and melted chocolate. Feel free to try out some other toppings like chopped nuts, yogurt, dried fruit or flaky sea salt!

    Nut-Free: Make these nut-free by swapping in sunflower seed butter!

    Apple Samoas are incredibly versatile and can be served in a variety of ways! Here are some ideas:

    For a simple snack:

    • As is: The most straightforward way to enjoy them is simply sliced and arranged on a plate. This is perfect for a quick afternoon snack or a healthy dessert.
    • On a platter: Arrange the apple slices attractively on a platter for a visually appealing snack or appetizer when entertaining. You can add other fruits, nuts or even a small bowl of extra nut butter for dipping.

    Tips for serving:

    • Keep it fresh: Apples can brown quickly, so it's best to assemble the Apple Samoas shortly before serving. If you need to prepare them in advance, you can brush the apple slices with a little lemon juice to help prevent browning.
    • Customize it: Feel free to get creative with the toppings. You can add other ingredients like chopped nuts, seeds, dried fruit or even a sprinkle of sea salt.
