Equipment

  • 1 stockpot
  • 1 knife
  • 1 cutting board
  • 1 immersion blender

Ingredients

  • 1 tbsp oil
  • 1 sweet onion
  • 2 cloves garlic
  • 2 tbsp ginger
  • 1 tsp thyme
  • dash salt
  • 10 carrots
  • 2 cups chicken stock
  • 1 can coconut cream

Instructions

  • Gather your ingredients.
  • Chop carrots, onions, garlic and ginger.
  • Add onion to oiled stock pot and cook over medium heat until browned.
  • Stir in garlic, onion, carrots, thyme and salt.
  • Pour in broth, cover and simmer for about 20 minutes, or until vegetables are soft.
  • Use immersion blender to blend together soup and make it creamy.
  • Stir in coconut cream, serve and enjoy!

Notes

If you do not have an immersion blender, you can also use a blender!
