1 stockpot
1 knife
1 cutting board
1 immersion blender
- 1 tbsp oil
- 1 sweet onion
- 2 cloves garlic
- 2 tbsp ginger
- 1 tsp thyme
- dash salt
- 10 carrots
- 2 cups chicken stock
- 1 can coconut cream
Gather your ingredients.
Chop carrots, onions, garlic and ginger.
Add onion to oiled stock pot and cook over medium heat until browned.
Stir in garlic, onion, carrots, thyme and salt.
Pour in broth, cover and simmer for about 20 minutes, or until vegetables are soft.
Use immersion blender to blend together soup and make it creamy.
Stir in coconut cream, serve and enjoy!
If you do not have an immersion blender, you can also use a blender!
