Dairy Free Chicken Casserole

As it gets colder outside, nothing beats the warmth and comfort of this cozy dairy free chicken casserole. Packed with tender chicken, hearty rice and an irresistible blend of vegetables, this creamy gluten free and dairy free casserole is a crowd-pleaser!

Equipment

  • 1 8x8 baking dish
  • 2 forks

Ingredients

  • 1 cup frozen rice
  • 2 cups mirepoix
  • 1 tsp garlic powder
  • dash salt
  • 1 cup broth
  • 3/4 cup coconut milk or cream
  • 1 1/2 cups shredded chicken

Instructions

  • Preheat the oven to 350°F and gather your ingredients.
  • Shred your chicken. Add all of the ingredients into a greased 8x8 baking dish and stir them around.
  • Bake for 30-35 minutes. Option to broil at the end for 1-2 minutes to make the casserole crispy on the top. Serve and enjoy!

Notes

NOTE: I highly recommend using a rotisserie chicken, as it speeds up the process. I also recommend using frozen rice and vegetables to make this a super quick weeknight meal!
