    As it gets colder outside, nothing beats the warmth and comfort of this cozy dairy free chicken casserole. Packed with tender chicken, hearty rice and an irresistible blend of vegetables, this creamy gluten free and dairy free casserole is a crowd-pleaser! This meal is also so easy to make, which is a huge timesaver. It only takes a few minutes to prep and pop into the oven. It is filling and packed with veggies and protein. This casserole is also great for meal prep. It is sure to become a weekly staple!

    Equipment Needed

    All you need to make this dairy free chicken casserole is an 8×8 baking dish and 2 forks.

    Ingredients Needed

    Rice: You will need to use pre-cooked rice for this recipe. I recommend using a bag of frozen white rice to make this recipe super quick and easy! I like to use organic rice whenever I can.

    Mirepoix: Another key ingredient in this casserole that makes it super easy to prep is frozen vegetables. I like to use a mix of celery, onion and carrots in this dish!

    Broth: Feel free to use any kind of broth or stock you desire here! I used chicken stock.

    Coconut Milk or Cream: This gives the casserole a creamy texture and delicious flavor!

    Garlic Powder: Garlic powder is a common ingredient in chicken casseroles because it adds a savory and pungent flavor that complements the chicken and other ingredients.

    Chicken: I like to use a rotisserie chicken in this dairy free chicken casserole to make it super quick to make! You can also cook a whole chicken yourself or use cooked chicken breasts.

    Step-By-Step Instructions

    Step 1: Preheat the oven to 350°F and gather your ingredients.

    Step 2: Shred your chicken. Add all of the ingredients into a greased 8×8 baking dish and stir them around.

    Step 3: Bake for 30-35 minutes. Option to broil at the end for 1-2 minutes to make the casserole crispy on the top. Serve and enjoy!

    How to Shred Rotisserie Chicken

    Remove the meat from the bones. Once the skin is peeled off, you can use your hands or a knife to remove the meat from the bones. The meat will be easy to remove, as it is already cooked through.

    Shred or chop the chicken. Once the meat is removed from the bones, you can shred or chop it to your desired consistency. 

    Storage

    Let the casserole cool completely. Place the casserole in an airtight container or cover the casserole dish. Store the casserole in the refrigerator for up to 3 days.

    Variations

    Try out a crunchy topping for this dairy free chicken casserole to spice it up! I would recommend crushing some crackers and sprinkling them on top.

    Substitute the frozen rice for frozen quinoa or cauliflower rice to try out a new base.

    Add in extra vegetables like broccoli, peppers or zucchini to add in some additional flavor and texture.

    Experiment with different spices and herbs to personalize the flavor of your casserole. Try adding paprika, thyme or oregano for extra flavor!
