1 mixer or hand mixer
- 5 large potatoes
- ¼ cup vegan butter
- ¾ cup coconut milk
- 3 cloves garlic
- ½ tsp salt
- ½ tsp salt
Gather your ingredients.
Peel and chop the potatoes.
Add potatoes to water and boil until soft, about 15-20 minutes. They should feel soft when poked with a fork.
Add potatoes to mixer with butter, salt, garlic and milk.
Serve with chives and extra butter to garnish.
