Easy Carrot Cake Mug Cake

When you have a sweet tooth and need a treat ASAP, this Carrot Cake Mug Cake is the perfect solution! It takes about 5 minutes to make and is a single-serve dessert. It's delicious and takes very little effort to whip up.

Equipment

  • 1 mug
  • measuring spoons
  • 1 mixing spoon

Ingredients

  • 1/4 cup flour (gluten free if needed)
  • 1/2 tsp baking powder
  • 2 tbsp coconut sugar
  • 2 tbsp shredded carrots
  • 1 tbsp melted coconut oil
  • 2 tbsp milk (dairy free if needed)
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1 tbsp raisins
  • 1 tbsp crushed pecans
  • 2 tbsp vanilla frosting

Instructions

  • Gather your ingredients.
  • Combine all ingredients in the mug and microwave for 90 seconds.
  • Top with frosting and additional carrot shreds and pecans if desired!
