    When you have a sweet tooth and need a treat ASAP, this Carrot Cake Mug Cake is the perfect solution! It takes about 5 minutes to make and is a single-serve dessert. It’s delicious and takes very little effort to whip up. This mug cake is cozy, fun and you probably already have the ingredients on hand. No eggs are needed for this one. This dessert is so cute, packed with fresh carrots and warm spices and topped with vanilla frosting. Personally, I love these flavors all year round. This treat is a great way to satisfy your sweet tooth without having to bake an entire cake! The best part is that it all comes together in one mug!     All you need to make this mug cake is measuring spoons, a mixing spoon and a mug!

    Ingredients Needed

    Flour: I used gluten free flour because I’m gluten free, but regular flour should also work in this recipe.

    Baking Powder: Because mug cakes are cooked quickly, often in a microwave, baking powder is essential for creating a light and airy texture.

    Coconut Sugar: I used coconut sugar to sweeten this mug cake. You can also use cane sugar if that’s what you have on hand!

    Carrot: I used fresh grated carrots in this recipe!

    Coconut Oil: Melted coconut oil is used in place of butter in this recipe.

    Milk: Milk adds moisture to baked goods, contributing to a soft and tender texture.This is especially important in cakes and cookies.

    Vanilla Extract: Vanilla extract adds a delicious warm flavor to this mug cake.

    Cinnamon: Cinnamon adds a delicious warm flavor to this recipe.

    Nutmeg: Nutmeg adds a warm and slightly sweet flavor to this recipe.

    This carrot cake mug cake can be stored in the refrigerator, if necessary, but you will probably eat it in one sitting! It is a single serve recipe!

    Variations

    Flour: I used gluten free flour in this mug cake, but you can also use regular flour.

    Mix Ins: I used shredded carrots, raisins and pecans as mix ins. You can also try shredded coconut, white chocolate chips or dried cranberries.

    Milk: I used dairy free milk in this recipe because I am dairy free, but feel free to use regular milk. I like to use almond milk, coconut milk or cashew milk!

    Sugar: I used coconut sugar in this recipe because it has a lower glycemic index but you can also use cane sugar or date sugar. Whatever you have on hand!

    Frosting: I used store bought vanilla frosting in this recipe, but you can also use homemade frosting or drizzle the top with honey or melted white chocolate! You can also try using whipped cream instead of frosting as well.

    How To Serve

    Mug cakes are best eaten straight out of the mug!

    I like to enjoy mine warm.

    Add some frosting, whipped cream or a scoop of vanilla ice cream.

    I like to sprinkle mine with chopped pecans and shredded carrots.

    Add a sprinkle of cinnamon!

    Try dusting the top with powdered sugar or adding a caramel drizzle!
