Easy Teriyaki Chicken Meal Prep

Equipment

  • 1 baking sheet
  • 1 pot
  • 1 large skillet
  • 1 cutting board

Ingredients

  • 1 tbsp oil
  • 1 lb chicken breasts
  • 1 bag frozen broccoli
  • 1 cup rice, dry
  • 1 tsp garlic powder
  • dash salt
  • 1 1/2 cups pineapple, cubed
  • 3 tbsp teriyaki sauce or coconut aminos
  • green onions (for topping)

Instructions

  • Gather your ingredients and preheat oven to 400°F.
  • Cut chicken breast into bite-sized pieces, add to an oiled skillet and cook over medium heat.
  • While the chicken is cooking, make rice according to package.
  • Add the broccoli florets to the baking sheet. Drizzle with oil, salt and garlic and bake for 15-20 minutes.
  • Once chicken is browned, add in sauce and cook for 3-5 minutes.
  • Assemble your meal prep by combining rice, chicken, broccoli, pineapple and topping with green onion or eat it right away as a teriyaki chicken bowl!
