    If you are looking for a delicious and quick lunch or dinner idea, you have to try these amazing teriyaki chicken meal prep bowls! This is one of my absolute favorite chicken meal prep recipes. Packed with protein, fresh veggies and savory flavors, these bowls are the perfect solution for busy weeknights. It is the perfect way to change it up from the typical stir fry. The best part? This recipe uses simple ingredients you likely already have on hand, making it a lifesaver for those chaotic evenings. You will have tender saucy chicken, perfectly cooked rice, refreshing pineapple and fresh veggies whipped up in no time. These bowls can be a complete meal on their own and they are packed with protein! Meal prepping these teriyaki chicken bowls for the week is truly a game changer. Your whole family will love them, even picky eaters!

    Equipment Needed

    All you need to make this teriyaki chicken meal prep is a baking sheet, large skillet, pot, knife and cutting board.

    Ingredients

    Oil: I used avocado oil here but feel free to use any oil that you have on hand!

    Chicken: I used organic boneless skinless chicken breast. My favorite place to get my meat and fish is ButcherBox because they have organic and high-quality options and it gets delivered right to your door! You can also use chicken thighs in this recipe.

    Broccoli: I used frozen broccoli in this recipe to make it super simple, but feel free to use fresh broccoli florets.

    Rice: I used wild rice because that’s what I had on hand. You can also use brown rice or white rice!

    Garlic: I used garlic powder to top the broccoli and chicken! Feel free to use fresh garlic if you prefer.

    Pineapple: Pineapple gives this teriyaki chicken meal prep a delicious flavor! It balances savory flavors in this dish.

    Sauce: I used coconut aminos in this meal prep. You could also use regular teriyaki sauce.

    Green Onions: I like to top this meal prep with green onions for some freshness!

    Step-By-Step Instructions

    Step 1: Gather your ingredients and preheat oven to 400°F.

    Step 2: Cut chicken breast into bite-sized pieces, add to an oiled skillet and cook over medium heat.

    Step 3: While the chicken is cooking, make rice according to package.

    Step 4: Add the broccoli florets to the baking sheet. Drizzle with oil, salt and garlic and bake for 15-20 minutes.

    Step 5: Once chicken is browned, add in sauce and cook for 3-5 minutes.

    Step 6: Assemble your meal prep by combining rice, chicken, broccoli, pineapple and topping with green onion or eat it right away as a teriyaki chicken bowl!

    Storage

    Store this chicken teriyaki in glass meal prep containers in the refrigerator for 3-4 days.

    Variations

    Chicken: I used chicken breast in this recipe but feel free to try using chicken thighs or even use ground chicken and make chicken meatballs!

    Rice: I used wild rice in this recipe but you can use any kind of rice! Try using jasmine rice, brown rice, black rice, cauliflower rice or even quinoa!

    Vegetables: I used broccoli in this recipe but you can use any kind of vegetables that you love. Try mixing things up with green beans, bell pepper or onions.

    Sauce/Flavor: I used coconut aminos in my version, but using teriyaki sauce or soy sauce would also be delicious. You could even make homemade teriyaki sauce! Fresh ginger would also be a flavorful addition to this dish.

    Toppings: I like to top this healthy meal prep with green onions but feel free to also use sesame seeds.

    How to Serve

    This teriyaki chicken meal prep can be put in glass containers and stored for meal prep until ready to consume. It can also be served right away in a bowl! Try turning it into a lettuce wrap or sandwich too.

     Cooked chicken can be stored safely in the refrigerator for up to 4 days. It’s best to err on the side of caution and plan to eat your prepped chicken within that timeframe.

    What food goes well with teriyaki chicken?

    I love pairing my chicken with rice, broccoli and pineapple!

    How do you make teriyaki sauce?

    In a saucepan, whisk together soy sauce, your chosen sweetener, grated ginger and grated garlic. Heat the mixture over medium-high heat, bringing it to a simmer. If you want a thicker sauce, prepare a cornstarch slurry by mixing cornstarch with a little cold water until smooth. Slowly whisk the slurry into the simmering sauce, cooking for a few minutes until it reaches your desired consistency.

    Can I make the rice in a rice cooker?

    Yes!

    Can I make this recipe in a slow cooker?

    Yes! Marinate the chicken first and then put it in the slow cooker. The vegetables can be added directly to the slow cooker as well.
