French Onion Chicken Gnocchi
This French onion chicken gnocchi is quite possibly one of my best creations. I am obsessed with anything French onion flavored from soup to pasta to proteins. I am also a huge lover of gnocchi, so I thought why not marry the two? The result is rich, savory and pillowy, plus there's protein so it's still a wholesome dinner option! This one took me a few tries to get the liquid ratio right, but the final result is French onion soup in pasta form. I've been making versions of French Onion everything for years and this spin is definitely my favorite yet.

- 2 sweet onions
- 1 lb chicken breast diced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp thyme
- 1 cup broth
- 1/3 cup coconut aminos
- 1 package gnocchi 17.6 oz
- 1/4 cup coconut milk
Chop onions into half moons.
Saute onions on low-medium heat in a pan until caramelized.
Add in chicken, season and cook until done.
Pour in broth and coconut aminos and let simmer for 5 minutes.
Add in gnocchi and cook for another 3-5 minutes.
Stir in coconut milk and let simmer for 2 minutes.
