Funfetti Ice Cream

It's the season for sunshine, pool parties and of course, delicious frozen treats like this funfetti ice cream! This year, ditch the store-bought ice cream and whip up a batch of this easy, homemade ice cream instead. Packed with colorful sprinkles and made with just a few simple ingredients, this creamy concoction is the perfect way to celebrate summer.

Equipment

  • 1 baking sheet
  • 1 blender
  • 1 ice cream maker

Ingredients

  • 1 can coconut milk
  • 1 can coconut cream
  • 1 tbsp vanilla extract
  • 4 dates
  • dash sea salt
  • 1/2 cup cake mix
  • sprinkles

Instructions

  • Gather your ingredients.
  • The day before making this funfetti ice cream, make sure you place your ice cream bowl in the freezer.
  • When you are ready to make this ice cream, preheat your oven to 350°F. Bake cake mix on a baking sheet for 10 minutes.
  • Combine coconut milk, coconut cream, dates, vanilla and sea salt in a high-speed blender.
  • Pour into prepped ice cream maker and churn until thick. Add in cake mix and sprinkles at the end.
  • Pour mixture into baking dish and freeze for 1-2 hours. Scoop and enjoy!
