Packed with colorful sprinkles and made with just a few simple ingredients, this creamy concoction is the perfect way to celebrate summer. Whether you enjoy a scoop alone on a hot day or turn it into an epic ice cream cookie sandwich, this foolproof recipe is sure to become a new favorite! It’s kid-friendly and also naturally dairy free! This ice cream is the perfect way to satisfy your sweet tooth.

    All you need to make this funfetti ice cream is a baking sheet, blender and an ice cream maker.

    Ingredients Needed

    Coconut Milk: Coconut milk is what makes this funfetti ice cream dairy free and also gives it a creamy texture and flavor!

    Coconut Cream: Coconut cream makes this ice cream thicker and gives it a better consistency!

    Vanilla Extract: I love the flavor that vanilla adds to desserts!

    Dates: I used dates to sweeten this ice cream naturally, but feel free to swap for sugar instead. If you want your ice cream to be bright white, use white sugar or sweetener instead.

    Sea Salt: A small amount of sea salt can heighten the perception of sweetness in the ice cream. It creates a contrasting flavor that makes the sweetness pop.

    Sprinkles: Sprinkles are a must when it comes to funfetti!

    Cake Mix: I used cake mix in this ice cream to give it a cake batter flavor.

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: The day before making this funfetti ice cream, make sure you place your ice cream bowl in the freezer.

    Step 3: When you are ready to make this ice cream, preheat your oven to 350°F. Bake cake mix on a baking sheet for 10 minutes.

    Step 4: Combine coconut milk, coconut cream, dates, vanilla and sea salt in a high-speed blender.

    Step 5: Pour into prepped ice cream maker and churn until thick. Add in cake mix and sprinkles at the end.
