Gluten Free Cookie Dough Ice Cream
This gluten free cookie dough ice cream tastes like the warm memories of summer sunshine and childhood pool days. My absolute favorite flavor of ice cream growing up was cookie dough and I haven't had it since I developed food allergies several years ago. This version is so nostalgic and makes me so happy! It is incredibly easy, no-churn, gluten free and also vegan!

1 high-speed blender
1 container
- 1 cup coconut milk
- 1 cup cashews, soaked
- 1 tbsp vanilla extract
- 1 dash sea salt
- 1/4 cup honey or sweetener
- 1 cup frozen cookie dough balls
- 1 cup mini chocolate chips
Gather your ingredients.
Combine coconut milk, cashews, sea salt, honey and vanilla extract in a high-speed blender.
Pour mixture into container, add chocolate chips and cookie dough and freeze until hardened.
Once hardened, remove from freezer, scoop and enjoy!
