    This gluten free cookie dough ice cream tastes like the warm memories of summer sunshine and childhood pool days. My absolute favorite flavor of ice cream growing up was cookie dough and I haven’t had it since I developed food allergies several years ago. This version is so nostalgic and makes me so happy! It is incredibly easy, no-churn, gluten free and also vegan! Loaded with chunks of delicious, egg free cookie dough and rich chocolate chips, this vegan and dairy free ice cream is the perfect way to cool down on a hot day.

    All you need to make this gluten free cookie dough ice cream is a high-blender, container/baking dish and measuring cups and spoons.

    Ingredients Needed

    Coconut Milk: Coconut milk makes this gluten free cookie dough ice cream so creamy and delicious.

    Cashews: Cashews are a popular base for dairy free ice cream because they lend themselves well to creating a creamy texture similar to regular ice cream. I love the combination of cashew and coconut milk here!

    Vanilla Extract: Vanilla extract adds delicious flavor to this gluten free cookie dough ice cream!

    Sea Salt: The contrasting salty taste of sea salt actually makes the sweetness of the ice cream stand out more. This is similar to why people enjoy the combination of sweet and salty flavors in desserts like salted caramel or chocolate-covered pretzels.

    Honey: Honey adds sweetness to this ice cream. Feel free to try maple syrup, agave or coconut sugar instead.

    Cookie Dough Bites: Use store bought cookie dough bites or make your own. You can also add in regular cookies. Doubled my cookie dough recipe and froze it into little cookie dough balls.

    Chocolate Chips: I used mini chocolate chips in this ice cream recipe! Feel free to use any kind of chocolate chips you love.

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Combine coconut milk, cashews, sea salt, vanilla extract and honey in a high-speed blender. Blend until smooth.

    Step 3: Pour mixture into container, add chocolate chips and cookie dough and freeze until hardened.

    Step 4: Once hardened, remove from freezer, scoop and enjoy!

    Storage

    Store this gluten free cookie dough ice cream in the freezer in an airtight container for 3 months.

    Sweetener: I used honey in this recipe but you can use any sweetener you desire. Try agave, maple syrup, sugar or coconut sugar.

    I have only tried using coconut milk in this recipe but let me know if you try another type of milk!

    If you can find store bought edible cookie dough that is gluten free, you can definitely use that!
