Gluten Free Enchiladas
These gluten free enchiladas are a staple in our home! I honesty crave them at least once a week. This dish features a creamy chicken filling rolled in soft tortillas and simmered in a flavorful green enchilada sauce! These gluten free enchiladas are easy to make and easy to assemble.

- 1 1/2 cups shredded chicken
- 1/2 sweet onion, chopped
- 1 1/2 cups shredded cheese (dairy free if needed)
- 1 cup plain yogurt (dairy free if needed)
- 2 tbsp taco spices
- 1 jar green enchilada sauce
- 8 tortillas
Toppings
- 1 jalapeño, chopped
- 1 tsp red pepper flakes
- 1 tbsp green onion, chopped
Preheat your oven to 350°F and gather your ingredients.
Combine shredded chicken, onion, yogurt, 3/4 cup shredded cheese and taco spices in a bowl.
Pour half of the green sauce into the bottom of the baking dish.
Spread chicken mixture onto each tortilla and roll up.
Place each roll up in the baking dish.
Pour remaining sauce and cheese on top.
Bake for 35-40 minutes.
Add desired toppings, serve and enjoy!
