Gluten Free Enchiladas

These gluten free enchiladas are a staple in our home! I honesty crave them at least once a week. This dish features a creamy chicken filling rolled in soft tortillas and simmered in a flavorful green enchilada sauce! These gluten free enchiladas are easy to make and easy to assemble.

Equipment

  • 1 spoon
  • 1 baking dish

Ingredients

  • 1 1/2 cups shredded chicken
  • 1/2 sweet onion, chopped
  • 1 1/2 cups shredded cheese (dairy free if needed)
  • 1 cup plain yogurt (dairy free if needed)
  • 2 tbsp taco spices
  • 1 jar green enchilada sauce
  • 8 tortillas

Toppings

  • 1 jalapeño, chopped
  • 1 tsp red pepper flakes
  • 1 tbsp green onion, chopped

Instructions

  • Preheat your oven to 350°F and gather your ingredients.
  • Combine shredded chicken, onion, yogurt, 3/4 cup shredded cheese and taco spices in a bowl.
  • Pour half of the green sauce into the bottom of the baking dish.
  • Spread chicken mixture onto each tortilla and roll up.
  • Place each roll up in the baking dish.
  • Pour remaining sauce and cheese on top.
  • Bake for 35-40 minutes.
  • Add desired toppings, serve and enjoy!
