    Gluten Free Enchiladas

    These gluten free enchiladas are a staple in our home! I honesty crave them at least once a week. This dish features a creamy chicken filling rolled in soft tortillas and simmered in a flavorful green enchilada sauce! These gluten free enchiladas are easy to make and easy to assemble. They require minimal ingredients, making them a simple and straightforward dinner solution. They are also dairy free! This dish also takes about 15 minutes to throw together and pop in the oven. I highly recommend using rotisserie chicken as a quick hack.

    This dinner is perfect for feeding a crowd! Serve them at your next dinner party. These better than restaurant quality enchiladas are a family favorite and they're also great for make-ahead meals. I often double the batch to have leftovers on hand!     Equipment Needed

    All you need to make these gluten free enchiladas is a bowl, spoon and a baking dish.

    Ingredients Needed

    Shredded Chicken: I like to use a rotisserie chicken to make this meal super quick. I also like to shred the chicken with my KitchenAid mixer!

    Onion: I used sweet onion in this recipe because it gives these gluten free enchiladas a delicious flavor.

    Shredded Cheese: I used dairy free cheese in this recipe because I am dairy free!

    Yogurt: I used dairy free yogurt in this recipe because I am dairy free. The yogurt makes the chicken mixture super creamy!

    Taco Spices: Taco spices give these enchiladas a spicy kick!

    Tortillas: I used gluten free tortillas in this recipe! You can also use corn tortillas, just make sure they are gluten free.

    Green Enchilada Sauce: I love green chicken enchiladas and the green sauce gives these enchiladas an incredible flavor!

    Toppings: I topped my gluten free enchiladas with jalapeños, green onions and red pepper flakes.

    Step-By-Step Instructions

    Step 1: Preheat your oven to 350°F and gather your ingredients.

    Step 2: Combine shredded chicken, onion, yogurt, 3/4 cup shredded cheese and taco spices in a bowl.

    Step 3: Pour half of the green sauce into the bottom of the baking dish.

    Step 4: Spread chicken mixture onto each tortilla and roll up.

    Step 5: Place each roll up in the baking dish.

    Step 6: Pour remaining sauce and cheese on top.

    Step 7: Bake for 35-40 minutes.

    Step 8: Add desired toppings, serve and enjoy!

    Storage

    Store these gluten free enchiladas in an airtight container in the refrigerator for 4-5 days. These make a great meal prep!

    Variations

    Meat: I used shredded chicken in these enchiladas, but you can also use ground chicken, ground turkey or ground beef.

    Vegetables: I added sweet onion to these enchiladas, but feel free to add additional vegetables for extra nutrients. I like to add in zucchini, mushrooms and peppers.

    Cheese: I used dairy free mozzarella cheese, but feel free to mix it up and use other types of cheese.

    Yogurt: I used dairy free yogurt in these enchiladas. You can also use sour cream (dairy free if needed)!

    Spices: I used taco spices in these enchiladas to give them tons of flavor! If you don't have taco spice on hand you can also make your own. Combine spices like chili powder, cumin, oregano, garlic powder, onion powder, paprika and a pinch of cayenne pepper.

    Tortillas: I used gluten free tortillas in this recipe, but you can also use corn tortillas (just make sure they are gluten free).

    Enchilada sauce: I used green enchilada sauce to make this dish, but you can also use red sauce or even salsa!

    Toppings: I topped this dinner with jalapeños, green onions and red pepper flakes. You can also add avocado slices, sour cream, guacamole, diced tomatoes, olives and crema.

    Traditionally, they are made of corn tortillas. Flour tortillas are more common in Tex-Mex and Americanized versions of enchiladas. They are softer and more pliable, making them easier to roll. If you are eating enchiladas at a restaurant, it is very important to check if the tortillas are corn or flour!

    Can I make these enchiladas dairy free? 

    Yes, these can be made dairy free by using dairy free yogurt and dairy free cheese. It is also important to ensure that none of your other ingredients contain dairy.
