This vibrant Green Goddess Chicken Salad has become my go-to lunch—fresh, filling, and loaded with protein. Using rotisserie chicken keeps things effortless, making it a breeze to whip up and ideal for meal prep. I’m especially into the fact that it’s gluten free and made with a homemade dressing I can trust—no mystery ingredients here. It’s delicious with gluten free crackers or served alongside your favorite bread for a satisfying bite.

Equipment

  • 1 cutting board
  • 1 knife
  • 1 blender if making the dressing

Ingredients

  • 1 lb chicken breast cooked (or 1 rotisserie chicken)
  • ¾ cup green goddess dressing
  • ½ avocado
  • ½ red onion chopped

Instructions

  • Gather your ingredients.
  • Shred chicken (my hack for this is shredding it in a stand mixer).
  • Combine chicken, dressing, avocado and red onion in a bowl.
