    This wholesome Green Goddess Chicken Salad is a protein-packed lunch I can’t stop eating/making. Using rotisserie chicken makes it so easy – ready in minutes and perfect for meal prepping. I love that it is gluten friendly and that I know exactly what goes into the flavorful homemade dressing. Pair it with gluten free crackers for some extra crunch.     Tastes like a restaurant salad but it’s so easy to make.

    Make it once, enjoy it all week. It holds up well in the fridge, and tastes just as good the next day—maybe even better because the flavors really meld together!

    WHAT IS GREEN GODDESS SALAD DRESSING?

    Green Goddess Dressing is a luscious, creamy blend that gets its signature color from all the fresh herbs like basil, dill, chives and parsley. Balanced with lemon juice and garlic, its flavor is bright, tangy and pretty irresistible.

    Traditional recipes sometimes include anchovies or capers for extra umami, but plant-based versions skip the fish.

    This herby sauce is perfect for more than just salad—think roasted veggies, grilled proteins, sandwiches and more. I whip it up to make my meals have garden-fresh flavor.

    EQUIPMENT NEEDED

    You’ll need a small food processor or blender to make the dressing, a knife and a chopping board. I use a mixing bowl to combine everything.

    INGREDIENTS NEEDED

    Chicken breast, cooked: You can also use leftover rotisserie chicken or deboned cooked chicken thighs.

    Green goddess dressing: If you haven’t tried it yet, you’re going to love my Green Goddess Dressing. You can also use store-bought if you are looking to save time.

    Avocado: Adds a creaminess to the salad that goes so well with the bright dressing and juicy chicken.

    Red onion: I find that red onion has a milder taste than regular onion.

    STEP BY STEP INSTRUCTIONS

    Step 1: Round up your ingredients.

    Step 2: Shred the chicken (my hack for this is shredding it in a stand mixer).

    Step 3: Combine chicken, dressing, avocado and red onion in a bowl. You’re ready to go!

    STORAGE

    This green goddess chicken salad can be stored in the fridge in an airtight container for up to 3 days. It makes a great meal prep as well!

    VARIATIONS

    Add Mediterranean flavors like olives, cherry tomatoes, cucumber or crumbled dairy free feta cheese to your green goddess chicken salad.

    Make an extra crunchy green goddess chicken salad – add shredded cabbage, chopped apple and celery, radishes and sliced almonds. SO good!

    Make a grain bowl version by serving it over quinoa, farro or wild rice with roasted veggies and microgreens.

    HOW TO SERVE

    Here’s how I serve my green goddess chicken salad:

    • Serve straight away for the freshest salad experience.
    • I like to have mine at room temperature, but it’s great chilled too.
    • Go ahead and add extra crunchy salady bits and other herbs like fresh mint.
    • Double the recipe and serve it with toasted gluten free bread as a lunch for 2.
