Ground Beef Burrito Bowl

  • bowls or meal prep containers

Ingredients

  • 2 lbs ground beef
  • 1 1/3 cups uncooked rice
  • 1 cup frozen peppers
  • 1/2 sweet onion
  • 1 container black beans
  • 1 container premade guacamole
  • 1 jar salsa or pico de gallo
  • 2 cups lettuce
  • 2 tbsp seasoning

Green Chile Burrito Dressing

  • 1/4 cup coconut milk
  • 1/4 cup avocado oil
  • 1 can green chiles (4.5 oz)
  • 1 tbsp lemon juice
  • 1 cup cashews (pre-soaked for 2-3 hours)
  • 1 clove garlic
  • 1 tbsp coconut sugar
  • dash salt

Instructions

  • Gather your ingredients.
  • Cook your rice according to the package. Cook it either in a pan or microwave it depending on what kind of rice you have on hand!
  • Add the ground beef and seasoning to an oiled pan and cook over medium-high heat.
  • While the beef is cooking, cook the onions and bell peppers as well.
  • Cook the black beans in a pot or in the microwave.
  • Make the dressing by combining all ingredients in a high-speed blender.
  • Once all of the ingredients are ready, assemble your bowls by adding ground beef, vegetables, salsa, black beans, guacamole, lettuce and rice.
