Rice: I like to use white rice in this bowl. A great shortcut is to use microwavable rice for this. You can use white rice, brown rice, quinoa or even cauliflower rice for this bowl.
Vegetables: I love using bell peppers, onions, lettuce, jalapeños and tomatoes in this meal. A great shortcut can be using frozen bell peppers so you don’t have to chop them!
Black Beans: Black beans add a great source of plant-based protein and fiber, making the bowl more filling and keeping you satisfied for longer.
Salsa: Feel free to use jarred salsa for this bowl or pico de gallo. You can also make your own! Experiment with fun flavors too like mango salsa or pineapple salsa!
