Honey Garlic Salmon with Peach Salsa
This salmon with peach salsa is the best way to eat salmon in the summer. I am mainly a chicken, beef or turkey gal when it comes to protein, but I know eating salmon for the benefits is important. This means that in order for me to eat salmon, it has to be really super flavorful. This recipe has the perfect marinade and the peach salsa adds a fun summer twist.

Coconut Rice
- 1 1/2 cups white rice
- 1 can coconut milk 13.5 oz
- 1 3/4 cups water
Honey Garlic Salmon
- 2 fillets salmon
- 2 tbsp olive oil
- 2 tbsp coconut aminos
- 1 tbsp honey
- 1 tsp garlic powder
Peach Salsa
- 1 peach
- 1/4 red onion
- 1 avocado
- 3/4 cup roasted corn
- 1 tsp lime juice
- 1/2 red pepper
Combine rice, coconut milk and water in a pot. Bring to a boil, cover, turn down and simmer for 15 minutes.
Combine ingredients for marinade in a bowl. Add in salmon and marinate for 20-30 minutes.
Air fry at 375°F for 15-18 minutes or until done.
Chop vegetables and fruit and combine in a bowl. Squeeze over lime (optional).
RECIPE TIPS:
- Leave the skin on the salmon if you want it to be crispy!
- Peach ripeness honestly matters the most and can make or break the recipe. Use a firm-ripe peach, not a soft and mushy one.
- For the salsa, dice everything roughly the same size.
- Let the salsa rest for 10 minutes if possible so the flavors meld together.
