    Honey Garlic Salmon with Peach Salsa

    This salmon with peach salsa is the best way to eat salmon in the summer. I am mainly a chicken, beef or turkey gal when it comes to protein, but I know eating salmon for the benefits is important. This means that in order for me to eat salmon, it has to be really super flavorful. This recipe has the perfect marinade and the peach salsa adds a fun summer twist.

    Why You'll Love This Peach Salsa Salmon

    This dish comes together in less than an hour and is the perfect weeknight meal! It incorporates fresh summer produce and is naturally gluten-free and dairy-free. Sweet juicy peaches, paired with crispy air fried salmon make it a nice way to switch up your typical boring salmon recipes.

    I love serving this meal for summer dinner parties. It looks a lot more impressive than the effort it actually takes. The peach salsa is made while the salmon and coconut rice are cooking, so the recipe feels effortless.

    Ingredients You'll Need

    For the salmon:

    • Salmon: I try to get high-quality and wild caught salmon whenever I can!
    • Olive oil: This is used for the base of the marinade.
    • Coconut aminos: I love the flavor that coconut aminos gives to this recipe. You can also use soy sauce.
    • Honey: Adds sweetness and flavor to the salmon.
    • Garlic powder: Adds tons of flavor to this recipe.

    For the rice:

    • White rice: I used white rice for the base of this bowl. You can also use brown rice.
    • Coconut milk: Coconut milk makes this rice super creamy and delicious.
    • Water: Used to cook the rice in.

    For the peach salsa:

    • Peach: Makes up the base of this fruit salsa! Make sure they are ripe.
    • Red onion: Adds texture and crunch.
    • Avocado: Contributes creaminess, fat and flavor. Make sure they are ripe!
    • Roasted corn: Adds sweetness and texture.
    • Lime: Makes the salsa taste so fresh!
    • Red pepper: Optional but adds extra flavor to this salsa.

    Recipe Variations

    • Protein: Swap salmon for chicken or shrimp instead!
    • Salsa swap: Swap in mango or pineapple instead of peaches. You can also try nectarines!
    • Spice: Add jalapeño or serrano pepper for spice!
    • Base: Swap coconut rice for brown rice, cauliflower rice or quinoa. You could also serve over a bed of greens instead of rice for a lighter option.
    • Cooking method: Try grilling or pan searing the salmon instead of air frying it.

    How To Make Peach Salmon

    Step 1: Combine ingredients for marinade in a bowl. Add in salmon and marinate for 20-30 minutes.

    Step 2: Air fry at 375°F for 15-18 minutes or until done.

    Step 3: While salmon is cooking, combine rice, coconut milk and water in a pot. Bring to a boil, cover, turn down and simmer for 15 minutes.

    Step 4: Chop vegetables and fruit and combine in a bowl. Squeeze over lime (optional).

    Step 5: Assemble bowls and enjoy!

    Recipe Tips

    • Leave the skin on the salmon if you want it to be crispy!
    • Peach ripeness honestly matters the most and can make or break the recipe. Use firm-ripe peaches, not soft and mushy ones.
    • For the salsa, dice everything roughly the same size.
    • Let the salsa rest for 10 minutes if possible so the flavors meld together.

    Storage and Make Ahead Tips

    This salmon with peach salsa can be stored in the fridge in an airtight container for up to 2 days, but it is best eaten immediately! I would recommend reheating the salmon in the air fryer.

    If you are serving this for a dinner party, the rice and salsa can be made ahead of time and I would recommend making the salmon right before your guests come and keeping it warm.

    I do not recommend freezing this recipe.

    Ingredients

    Coconut Rice

    • 1 1/2 cups white rice
    • 1 can coconut milk 13.5 oz
    • 1 3/4 cups water

    Honey Garlic Salmon

    • 2 fillets salmon
    • 2 tbsp olive oil
    • 2 tbsp coconut aminos
    • 1 tbsp honey
    • 1 tsp garlic powder

    Peach Salsa

    • 1 peach
    • 1/4 red onion
    • 1 avocado
