Ingredients

  • 1 package chicken thighs
  • 1 mango
  • 1 cucumber
  • 1/2 red onion
  • 1/2 lime, juice
  • 1 tsp cilantro

Instructions

  • Cook chicken thighs as desired. I have been loving the air fryer lately!
  • Chop mango, red onion, cucumber and cilantro and add to a bowl. Add lime juice and combine.
  • Serve salsa with chicken and rice!
