How to Make the Best Mediterranean Chicken Meatball Bowl

- 1 package ground chicken
- 2 cloves garlic, minced
- 1/4 cup gluten-free flour or breadcrumbs
- 2 tbsp fresh dill
- Dash salt
- 2 tbsp avocado oil
- 1/4 lemon, juice
- 1/3 red onion, finely chopped + more for bowl
- 1 package hummus (or homemade)
- 1 cucumber, finely chopped
- 1 cup cherry tomatoes, chopped
- 1 cup microgreens
- 1 bunch green onions, chopped
Preheat oven to 400°F. Combine ground chicken, garlic, salt, dill, avocado oil, flour and red onion in a bowl.
Roll into 1 inch balls and place on baking sheet. Bake for 35-40 minutes or until browned. Option to broil at the end.
While the meatballs are cooking, cook your rice according to the package and chop your veggies.
Assemble your bowl with rice on the bottom and top it with meatballs, veggies and hummus. Enjoy!
