How to Make the Best Mediterranean Chicken Meatball Bowl

Ingredients

  • 1 package ground chicken
  • 2 cloves garlic, minced
  • 1/4 cup gluten-free flour or breadcrumbs
  • 2 tbsp fresh dill
  • Dash salt
  • 2 tbsp avocado oil
  • 1/4 lemon, juice
  • 1/3 red onion, finely chopped + more for bowl
  • 1 package hummus (or homemade)
  • 1 cucumber, finely chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup microgreens
  • 1 bunch green onions, chopped

Instructions

  • Preheat oven to 400°F. Combine ground chicken, garlic, salt, dill, avocado oil, flour and red onion in a bowl.
  • Roll into 1 inch balls and place on baking sheet. Bake for 35-40 minutes or until browned. Option to broil at the end.
  • While the meatballs are cooking, cook your rice according to the package and chop your veggies.
  • Assemble your bowl with rice on the bottom and top it with meatballs, veggies and hummus. Enjoy!
