Rice: I used white rice here because it’s my favorite! I like to use quick cook white rice because it makes the process easier. Ground Chicken: I purchase organic whenever I can!

Avocado Oil: I love the Chosen Foods brand. I usually grab this from Thrive Market as well!

Garlic: I love the flavor this adds to the meatballs. Garlic also has so many health benefits!

Dill: I have been loving using fresh dill lately! Dill is a good source of several essential vitamins and minerals and it is rich in antioxidants.

Lemon: Adding the juice from 1/4 lemon into the meatballs gives them a refreshing flavor!

Gluten-Free Flour: I typically use Bob’s Red Mill Paleo Flour in my recipes, but you can opt for a nut-free flour as well!

Red Onion: I like to add these to the meatballs as well for extra flavor and benefits. Red onions are rich in quercetin and also antioxidants.

Hummus: You can use store-bought hummus here, but I LOVE making my own hummus. There is just something about homemade hummus that cannot be beaten. I also have a sesame allergy, so I have created a sesame-free hummus recipe.

Bowl Toppings: I used cucumbers, tomatoes, green onion, red onion, dill and pea shoots to top my bowl! If you have histamine issues, definitely omit the tomatoes. The pea shoots are a great source of DAO, which can help break down histamine in the body so you can flush it out safely. Feel free to swap out for another type of microgreen if this does not apply to you or you prefer a different varietal!

How to Make This Delicious Chicken Meatball Bowl

Preheat oven to 400°F. Combine ground chicken, garlic, salt, dill, avocado oil, flour and red onion in a bowl. Roll into 1 inch balls and place on baking sheet. Bake for 35-40 minutes or until browned. Option to broil at the end. While the meatballs are cooking, cook your rice according to the package and chop your veggies. Assemble your bowl with rice on the bottom and top it with meatballs, veggies and hummus. Enjoy!

  • 1 package ground chicken
  • 2 cloves garlic, minced
  • 1/4 cup gluten-free flour or breadcrumbs
  • 2 tbsp fresh dill
  • Dash salt
  • 2 tbsp avocado oil
  • 1/4 lemon, juice
  • 1/3 red onion, finely chopped + more for bowl
  • 1 package hummus (or homemade)
  • 1 cucumber, finely chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup microgreens
  • 1 bunch green onions, chopped

Instructions
