1 skillet
1 mixing spoon
- 1 tbsp avocado oil
- 1 tbsp taco seasoning
- 2 medium potatoes
- 1 sweet onion
- 1 bell pepper
- 5 breakfast sausages
- 1 can black beans
- 1 jar salsa
- 3 eggs
- 1/4 cup microgreens (optional for topping)
- 1 jalapeño (optional for topping)
- 1 avocado (optional for topping)
Gather your ingredients.
Chop vegetables and sausages.
Add potatoes, onion and taco seasoning to oiled skillet and cook over medium heat until browned and potatoes begin to soften.
Add in pepper and sausages and cook until browned.
Pour in salsa and black beans.
Make 3 holes and crack the eggs into them. Cook until eggs are desired doneness.
Add toppings and enjoy!
