Mexican Breakfast Skillet

This Mexican breakfast skillet is a great way to change up your morning meal! It's super easy to make and adds a fun twist to a classic dish. This skillet is delicious, packed with flavor and very customizable!

Equipment

  • 1 cutting board
  • 1 knife
  • 1 skillet
  • 1 mixing spoon

Ingredients

  • 1 tbsp avocado oil
  • 1 tbsp taco seasoning
  • 2 medium potatoes
  • 1 sweet onion
  • 1 bell pepper
  • 5 breakfast sausages
  • 1 can black beans
  • 1 jar salsa
  • 3 eggs
  • 1/4 cup microgreens (optional for topping)
  • 1 jalapeño (optional for topping)
  • 1 avocado (optional for topping)

Instructions

  • Gather your ingredients.
  • Chop vegetables and sausages.
  • Add potatoes, onion and taco seasoning to oiled skillet and cook over medium heat until browned and potatoes begin to soften.
  • Add in pepper and sausages and cook until browned.
  • Pour in salsa and black beans.
  • Make 3 holes and crack the eggs into them. Cook until eggs are desired doneness.
  • Add toppings and enjoy!
