    This Mexican breakfast skillet is a great way to change up your morning meal! It’s super easy to make and adds a fun twist to a classic dish. This skillet is delicious, packed with flavor and very customizable! I used beans, vegetables, fried eggs and chicken sausage to add tons of nutrients and protein to start your day off right! This meal is more wholesome comfort food that is perfect for fueling your body. It makes a great savory breakfast or brunch! Plus, it’s easy to make gluten free and dairy free. The best part is that it’s made in one pan for easy cooking and clean up!

    Equipment Needed

    All you need to make this Mexican breakfast skillet is a cutting board, knife, mixing spoon and a skillet. I really like my Staub cast iron skillet.

    Ingredients Needed

    Oil: I used avocado oil in this recipe to oil my pan before cooking!

    Potatoes: I used Yukon Gold potatoes in this recipe! You can use any kind of potatoes you love.

    Onion: I love using sweet onion in my savory recipes! Onion adds delicious flavor to this recipe.

    Pepper: I used a red pepper in this recipe, but feel free to use any color bell pepper you prefer.

    Breakfast Sausages: Adding breakfast sausages to this recipe adds some additional protein!

    Taco Seasoning: I used Redmond’s Taco Seasoning in this recipe which is a blend of salt, ancho chili pepper, garlic, coriander, black pepper, cumin and cayenne.     Toppings: I used jalapeño, avocado and microgreens to top this dish!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Chop vegetables and sausages.

    Step 3: Add potatoes, onion and taco seasoning to oiled skillet and cook over medium heat until browned and potatoes begin to soften.

    Step 4: Add in pepper and sausages and cook until browned.

    Step 5: Pour in salsa and black beans.

    Step 6: Make 3 holes and crack the eggs into them. Cook until eggs are desired doneness.

    Step 7: Add toppings and enjoy!

    Storage

    This breakfast skillet is best eaten while hot, but you can also store it in the fridge in an airtight container for 3-4 days. It also makes a delicious meal prep!

    Variations

    Potatoes: I used Yukon Gold potatoes in this Mexican breakfast skillet, but you can also use russet, red or sweet potatoes!

    Vegetables: I used onion and bell pepper in this recipe! Feel free to add additional vegetables if you wish! Try out zucchini, broccoli, cauliflower, corn or spinach!

    Seasoning: I used taco seasoning here, but if you want a milder flavor feel free to just use garlic and salt.

    Meat: I used breakfast sausage in this recipe, but you can also use ground beef, ground chicken or ground turkey! You can also try out bacon.

    Beans: I used black beans in this skillet. Feel free to use pinto beans or kidney beans.

    Salsa: I used regular salsa in this skillet but you could also use green sauce!

    Eggs: Eggs make a delicious addition to this recipe, but feel free to omit them if you don’t like eggs or have a dietary restriction. This meal is still delicious without them!

    Toppings: I used jalapeño, avocado and microgreens to top this skillet. Try topping this meal with cheese (dairy free if needed), yogurt, hot sauce, cilantro, lime or chopped green onions!
