My Favorite Gluten-Free and Dairy-Free Winter Salad

Ingredients

  • 2 cups kale or arugula
  • 1 sweet potato, sliced and roasted
  • ½ honey crisp apple, thinly sliced
  • ¼ cup pumpkin seeds
  • ¼ cup dried cranberries or tart cherries
  • ¼ cup pecans
  • ½ avocado
  • Vegan cheese
  • Crackers of your choice

Instructions

  • Combine ingredients in a large bowl. Top with vegan cheese and crumbled crackers of your choice. I love pairing this with a sweet mustard dressing or a honey garlic vinaigrette!
