Whoever said salads are boring clearly isn’t making them right! I love adding tons of mix-ins into my salad to create loads of flavor! This winter salad is a great holiday dish and is so easy to throw together. The trick to making the perfect salad is adding tons of texture and crunch!
My Favorite Gluten-Free and Dairy-Free Winter Salad

Ingredients
- 2 cups kale or arugula
- 1 sweet potato, sliced and roasted
- ½ honey crisp apple, thinly sliced
- ¼ cup pumpkin seeds
- ¼ cup dried cranberries or tart cherries
- ¼ cup pecans
- ½ avocado
- Vegan cheese
- Crackers of your choice
Instructions
- Combine ingredients in a large bowl. Top with vegan cheese and crumbled crackers of your choice. I love pairing this with a sweet mustard dressing or a honey garlic vinaigrette!
