One Pan Enchilada Skillet

I love that they're packed with seasoned meat, sautéed onions, torn tortillas and rich enchilada sauce. It all simmers together to perfection in a single skillet. Quick to make and full of comforting flavor, it’s a simple weeknight dinner that I make all the time.

Equipment

  • 1 pan
  • 1 cutting board

Ingredients

  • 1 lb ground chicken
  • 1 sweet onion
  • 1 jar green enchilada sauce 15 oz
  • 1 package tortillas gluten free if needed

Instructions

  • Gather your ingredients.
  • Chop onion and add to skillet. Cook over low-medium heat until lightly browned.
  • Add in ground chicken and cook for 10-15 minutes.
  • Pour in enchilada sauce and continue to simmer. Rip up tortillas and add to pan. Cook until tortillas begin absorbing the liquid.
  • Add toppings, if desired and enjoy!
