Step 1: Grab your ingredients and get ready.

Step 2: Chop onion and add to skillet over medium heat with a litlte oil. Cook your onion until browned and softened.

Step 3: Add in the ground chicken and cook for 10-15 minutes. You want it browned and evenly cooked.
Step 4: Pour in enchilada sauce and let the mixture simmer, gently.

Step 5: Rip up tortillas and add to pan. Cook until the tortillas begin to absorb the liquid.

Step 6: Add toppings, if desired and enjoy!

Storage
Store leftovers in an airtight container for up to 3 to 4 days. Remember to let the One Pan Enchilada Skillet mixture cool completely before packing it up. The tortillas will continue to soften as they sit.
To freeze leftovers, transfer the cooled mixture to a freezer-safe container or bag and freeze for up to 2 months. I don't typically freeze my leftover toppings.
Warm on the stovetop over medium heat, adding a little broth or water if the mixture seems dry.
