One Pot Gluten-Free Beef Bolognese (Nightshade-Free)
This One Pot Gluten-Free Beef Bolognese is so cozy and the perfect weeknight dinner! It's made in under 30 minutes and uses my homemade nomato sauce, so it's free of tomatoes, nightshade-free and packed with hidden veggies. This dish is comforting, flavorful and super adaptable.

- 30 oz mirepoix
- 1 cup shredded beets
- 4 tbsp honey
- 2 tsp oregano
- 2 tsp thyme
- 1/2 tsp salt
- 2 tsp garlic powder
- 2 tbsp avocado oil
- 1 lb ground beef
- 1 box gluten-free pasta
Add vegetables and spices to an oiled pan and cook over medium heat until soft. Stir in honey.
Remove 2/3 of the vegetables and add to blender with oil until a sauce is formed.
Add ground beef to pan with vegetables and cook until browned.
Add sauce back into pan along with broth and bring to a boil.
Pour in pasta and cook for 10-12 minutes (depending on instructions on pasta box), or until soft.
