    One Pot Gluten-Free Beef Bolognese (Nightshade-Free)

    This One Pot Gluten-Free Beef Bolognese is so cozy and the perfect weeknight dinner! It's made in under 30 minutes and uses my homemade nomato sauce, so it's free of tomatoes, nightshade-free and packed with hidden veggies. This dish is comforting, flavorful and super adaptable.

    A few weeks ago, my friend made gluten-free beef bolognese and it smelled and looked SO good. I still am not able to tolerate tomatoes, so it inspired me to make a tomato-free and lower histamine version of the dish. I have had food allergies for 8+ years and have also dealt with various intolerances and had to do several elimination diets for my chronic conditions (read more of my story here), so I am an expert at making adaptable recipes! I have to say, I totally nailed the flavor on this one and Brett loves it too even though he is able to eat tomatoes.

    To make this recipe tomato-free, I used my favorite nomato sauce recipe, which is super easy to whip up and freezes really well. I also like to freeze this bolognese sauce to have on hand at all times and I just add pasta when I'm ready to serve it!

    Sauce: If you are not tomato-free, you can just use a jar of marinara sauce.

    Pasta: My favorite gluten-free pastas are Banza and Jovial!

    Mirepoix: I used frozen vegetables, but you can also purchase fresh carrots, celery and onion to make this recipe.

    Instructions

    Add vegetables to an oiled pan and cook over medium heat until soft.

    Add 2/3 of vegetables and avocado oil to blender and blend.

    Add ground beef into pot and cook until browned.

    Pour in broth, add back sauce and bring to a boil. Pour in pasta!

    Serve and enjoy!

    Variations

    Vegetables: Add in other veggies such as mushrooms, squash or fennel!

    Herbs: Try adding in fresh herbs!

    Broth: Swap out the broth for bone broth instead.

    Creaminess: Try adding in some dairy-free milk or my cashew cheese sauce if you want to make this dish creamy!

    Tips & Tricks

    Wait for the vegetables to cool a little before putting them in the blender!

    If you want the dish to be really creamy, add all of the vegetables to the blender instead of 2/3 of them. If you want it to be more chunky, add 1/3 of the vegetables to the blender.

    If you are cooking the pasta and the liquid does not cover it, add some more broth. You may need more broth depending on what pasta you are using.

    To get the beef nice and brown, push the vegetables to the sides of the pan and brown the beef in the center!

    Equipment

    • 1 pan
    • 1 spoon
    • 1 blender

    Ingredients

    • 30 oz mirepoix
    • 1 cup shredded beets
    • 4 tbsp honey
    • 2 tsp oregano
    • 2 tsp thyme
    • 1/2 tsp salt
    • 2 tsp garlic powder
    • 2 tbsp avocado oil
    • 1 lb ground beef
    • 1 box gluten-free pasta
    Get Recipe Ingredients

    Instructions

    • Add vegetables and spices to an oiled pan and cook over medium heat until soft. Stir in honey.
    • Remove 2/3 of the vegetables and add to blender with oil until a sauce is formed.
    • Add ground beef to pan with vegetables and cook until browned.
    • Add sauce back into pan along with broth and bring to a boil.
    • Pour in pasta and cook for 10-12 minutes (depending on instructions on pasta box), or until soft.
