Protein Cookie Dough Bark (Gluten-Free)
This protein cookie dough bark is the perfect snack I reach for when I'm craving a sweet treat and actually want to feel good after eating it! It satisfies my sweet tooth without the crash from regular cookie dough. I tested this recipe with multiple protein powders to get the texture right and it tastes like real cookie dough with zero chalky or gritty texture.

Combine ingredients in a bowl with 3/4 cup chocolate chips.
Press dough down onto a baking sheet lined with parchment paper.
Melt 3/4 cup chocolate chips (optional to add coconut oil to the chocolate as well to make it shiny) and drizzle on top of bark.
Freeze until hardened.
Break into pieces.
RECIPE TIPS:
- Melt your coconut oil fully and make sure it is slightly cooled before mixing.
- Make sure to press the bark down firmly and evenly. Even thickness means even setting and cleaner breaks.
- Line your pan with parchment paper so this bark lifts easily once set.
