This protein cookie dough bark is the perfect snack I reach for when I'm craving a sweet treat and actually want to feel good after eating it! It satisfies my sweet tooth without the crash from regular cookie dough. I tested this recipe with multiple protein powders to get the texture right and it tastes like real cookie dough with zero chalky or gritty texture.
I've been gluten-free and dairy-free for 8 years now, which means I've eaten a lot of "healthy" protein snacks that were disappointing, usually gritty or bland. I missed being able to eat cookie dough, so finding a version I could eat again was a huge win. I love to keep a stash of it in the freezer at all times.

Why You'll Love This High Protein Cookie Dough Bark
This cookie dough bark recipe only takes about 10 minutes to throw together and it's gluten-free, dairy-free and egg-free. It's naturally sweetened with honey, making it refined sugar-free. You only need 6 simple ingredients and one bowl to make this treat and you don't have to turn your oven on!
No-bake cookie dough bark is also freezer-friendly and is the perfect sweet treat to meal prep for the week. It's a great post-workout snack or afternoon pick-me up. It's easy to customize, kid-approved and a better-for-you alternative to store bought protein bars.
Ingredients You'll Need

- Almond flour: This is our base and it's naturally gluten-free. It gives these bars a soft texture.
- Protein powder: Adds a boost of protein so this snack keeps you full! I like to use an unflavored protein powder. This Ora protein powder gives these treats the best texture.
- Coconut oil: Gives these bars a super rich flavor and keeps the recipe dairy-free.
- Honey: Natural sweetener that keeps these bars refined sugar-free. You can also use maple syrup.
- Vanilla extract: Creates the best flavor and adds warmth. You can use a vanilla flavored protein powder instead but I prefer to use vanilla extract because it tastes so much better!
- Water: Helps bring the dough to the perfect consistency.
- Chocolate chips: Use dairy-free chocolate chips to keep this dairy-free. I prefer to use mini chips!
- Sea salt: An optional topper to sprinkle on at the end!
Recipe Variations
Protein powder: Try using chocolate protein powder to make this a double chocolate flavor or experiment with different flavors like chocolate mint or churro.
Mix-ins: Add other mix-ins like coconut flakes, sprinkles, white chocolate or nuts.
Nut butter: Stir in 1-2 tbsp of nut butter for extra creaminess and flavor.
Low histamine: Omit the chocolate chips to make this recipe low histamine and use a non-alcoholic vanilla extract.
Sweetener: Swap the honey for maple syrup to make this recipe vegan.
Sea salt: Optional to sprinkle this bark with sea salt!
How To Make Protein Cookie Dough Bark

Step 1: Combine ingredients in a bowl with 3/4 cup chocolate chips.

Step 2: Press dough onto baking sheet lined with parchment paper.

Step 3: Melt 3/4 cup chocolate chips (optional to add more coconut oil to make the chocolate shiny) and drizzle on top of bark.

Step 4: Freeze until hardened (at least 30-45 minutes). Break into pieces and enjoy!
Recipe Tips
- Melt your coconut oil fully and make sure it is slightly cooled before mixing.
- Make sure to press the bark down firmly and evenly. Even thickness means even setting and cleaner breaks.
- Line your pan with parchment paper so this bark lifts easily once set.
- Break your bark rather than cutting it.
- Don't skip the water. Add a little at a time to get the perfect dough texture.

Storage and Make Ahead Tips
This treat is perfect for meal prep because it stores really well in the freezer. I recommend storing them in a silicone bag or airtight container for up to 2 months. Let it sit at room temperature for a few minutes before eating so it's not too hard to bite into.
