Shepherd's Pie Mason Jar Meal Prep (Gluten-Free & Dairy-Free)

This Shepherd's Pie Mason Jar Meal Prep is hands down one of the best meal preps I've ever made. It is the perfect cozy comfort meal and I love how the layered jars look in my fridge. These jars are the perfect grab and go lunch or dinner. They are hearty, filling and come together in under 30 minutes!

Ingredients

  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 10 oz mirepoix
  • 3 large potatoes
  • 1 tbsp olive oil
  • 1/2 cup coconut aminos

Instructions

  • Boil water in a pot. Peel and chop potatoes and add to pot.
  • While potatoes are cooking, add ground beef, 1 tsp onion powder, 1/2 tsp salt and 1 tsp garlic powder to an oiled skillet. Cook on medium heat until browned. Pour in coconut aminos.
  • Remove beef from skillet and add vegetables. Cook until soft.
  • Mash potatoes with a fork and add 1 tsp olive oil and 1 tsp garlic powder and 1/2 tsp salt.
  • Layer components in jars starting with potatoes, then beef and then vegetables.
  • Add extra coconut aminos on top, if desired!
