Spaghetti Squash Pizza Casserole

If you're craving pizza and pasta but looking for a more wholesome option, this spaghetti squash pizza casserole will be your new go-to! This dish is low-carb and the perfect comfort food to satisfy your cravings! It is made with simple ingredients like ground beef, marinara sauce and your favorite pizza toppings!

Equipment

  • 1 baking sheet
  • 1 cutting board
  • 1 knife
  • 1 pan
  • 1 baking dish

Ingredients

  • 1 spaghetti squash
  • 2 tbsp avocado oil
  • 1 sweet onion
  • 1 lb ground beef
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • dash salt
  • 1 jar marinara
  • 1 1/2 cups cheese (or my cashew cheese recipe)
  • 1/2 cup pepperoni

Instructions

  • Gather your ingredients and preheat oven to 400°F.
  • Cut spaghetti squash in half. My hack for this is microwaving the spaghetti squash for 2-3 minutes first to make it easier to cut! Remove the seeds, drizzle with oil and place face down on a baking sheet.
  • Bake for 30 minutes, or until tender. This will depend on the size of your spaghetti squash.
  • Chop onions and add them to a pan on medium heat with ground beef, garlic, oregano and salt.
  • Once beef is browned, pour in marinara sauce and cook for 5 more minutes.
  • Squeeze spaghetti squash to drain the excess liquid. Add to a greased baking dish.
  • Layer meat sauce, cheese and toppings on top. Top with red pepper flakes and additional spices, if desired!
  • Bake for 25-30 minutes at 350°F. Enjoy!

Notes

PRO TIP: Make sure to squeeze excess liquid out of spaghetti squash before adding it to the baking dish!
