This dish is low-carb and the perfect comfort food to satisfy your cravings! It is made with simple ingredients like ground beef, marinara sauce and your favorite pizza toppings! This spaghetti squash casserole is also protein-focused! It is easy to prepare and packed with so much flavor. This dish is easy to customize and this dish can be made gluten free and dairy free. It is kid-friendly and perfect for a weeknight dinner or meal prep.     What Is Spaghetti Squash?

    Spaghetti squash is a type of winter squash that gets its name from the long, spaghetti-like strands of flesh that form when it’s cooked. It’s a popular low-carb alternative to traditional pasta, as it’s high in fiber and nutrients.

    Equipment Needed

    All you need to make this spaghetti squash pizza casserole is a baking sheet, cutting board, knife, pan and baking dish.

    Ingredients Needed

    Spaghetti Squash: I used a medium spaghetti squash for this recipe.

    Oil: I used avocado oil in this recipe to oil the pan and baking dish.

    Onion: I love adding onion into my ground beef. It adds delicious flavor and onions have so many health benefits.

    Meat: I used ground beef in this recipe, but feel free to use any ground meat you like!

    Marinara Sauce: I used spicy marinara in this casserole because Brett loves spice!

    Cheese: I used my cashew cheese sauce recipe in this casserole to make it dairy free. Feel free to use store bought cheese though!

    Toppings: I used pepperoni to top this casserole, but feel free to use any toppings you love!

    Step-By-Step Instructions

    Step 1: Gather your ingredients and preheat oven to 400°F.

    Step 2: Cut spaghetti squash in half. My hack for this is microwaving the spaghetti squash for 2-3 minutes first to make it easier to cut! Remove the seeds, drizzle with oil and place face down on a baking sheet.

    Step 3: Bake for 30 minutes, or until tender. This will depend on the size of your spaghetti squash.

    Step 4: Chop onions and add them to a pan on medium heat with ground beef, garlic, oregano and salt.

    Step 5: Once beef is browned, pour in marinara sauce and cook for 5 more minutes.

    Step 6: Squeeze spaghetti squash to drain the excess liquid. Add to a greased baking dish.

    Step 7: Layer meat sauce, cheese and toppings on top. Top with red pepper flakes and additional spices, if desired!

    Step 8: Bake for 25-30 minutes at 350°F. Enjoy!

    Storage

    Store this casserole in the refrigerator in an airtight container for 3-4 days. This recipe makes a great lunch or dinner meal prep!

    Variations

    Meat: I used ground beef in this recipe, but feel free to use ground turkey or ground chicken instead!

    Cheese: I used my cashew cheese recipe to make this dairy free, but feel free to use any cheese you love!

    Toppings: I used pepperoni as a topping, but you can use any toppings you love. Try out bacon, sausage, mushrooms, peppers, olives, spinach, broccoli, pineapple and/or artichoke hearts.

    Vegetables: I used onion, but you can add any vegetables into the marinara sauce that you love. Try adding peppers, mushrooms and more!

    Spices: I used garlic, salt, oregano and red pepper flakes

    Sauce: I used spicy marinara sauce, but feel free to use regular marinara! You can also use a pesto or a white sauce!

    How to Serve

    I like to serve this spaghetti squash pizza bake with a side salad or soup! It also makes a delicious meal on its own!

    I like to microwave the spaghetti squash for 3-4 minutes to make it easier to slice. Make sure to pierce the spaghetti squash with a fork several times before microwaving!
